Sometimes you may want to experiment, look for new colours and unexpected flavours in the kitchen. If today is the day, a herring pizza would be a perfect choice. Try this colourful, savoury flavoured dish. We know you will be surprised.

Ingredients

  • 375g wheat flour
  • 120g natural yogurt
  • 2 tbsp. olive oil
  • 1 tsp. dry yeast
  • 1 tbsp. sugar
  • ½ tsp. salt
  • 120 ml warm water
  • 2 cooked beetroots
  • 100g hard cheese
  • 50ml olive oil
  • 70g Salted cashew nuts
  • 3 garlic cloves
  • 1 tbsp. lemon juice
  • salt to taste
  • 250g. mozzarella cheese
  • 100g VIČI herring
  • 100g leaf cabbage (kale)

Preparation

Prepare the pizza base – mix flour, sugar, yeast and salt in a large bowl. Add warm water, olive oil and natural yogurt. Mix the mass well, make a round ball and cover it with clean kitchen towel. Leave it for 40 minutes in a warm place to raise.

While the base is raising, time to prepare beetroot pesto. Fry cashew nuts in a pan for a few minutes until they become golden brown. No oil is needed!

In a blender mix beetroots, nuts, lemon juice, garlic and hard cheese. Blend until smooth, with little traces of nuts.

Divide pizza dough into two pieces and roll out slices that are 30cm wide. Bake in an oven, preheated to 200°C for 8-9 minutes.

Take the pizza base out and cover with beetroot pesto, slices leaf cabbage and shredded mozzarella cheese. Continue to bake for 15-20 minutes until cheese is melted.

Top baked pizza with pieces of herring.
